avocado & bacon salad with homegrown spinach & herbs

Yesterday I harvested the first batch of veg & herbs from the garden and sent it in to the kitchen ladies who prepared us an amazingly delicious bacon and avo salad.  Spinach, parsley, dill, and spring onions went into the salad and dressing.  It was a hit~ lots of people remarked on how delicious it was.  Over 200 people at the school were served the salad as part of a larger meal.  This included: boarding and day students, staff, and support staff.  From now on food will be taken into the kitchen to be prepared for school meals.

Additionally, we are selling small bags of herbs to customers during lunch time at Fresh Cafe, located down the street from the school.  BIG thanks to Tonie, the owner of Fresh, who has given us the space to sell (and at no cost!).

Otshabile, Lorato, and Lesedi all worked hard to make this food grow and were rewarded with a scrumptious meal.  We plan to host a regular outdoor meal for the students involved in the garden.
